I don’t even like to cook

I never planned to start a food blog — I just wanted to feed my family something better than popcorn for dinner.

Cooking has never been my thing. Before I met my husband, “girl dinner” meant popcorn, cheese, and whatever was in the fridge. If I was really feeling fancy, I’d boil pasta or bake some plain chicken — seasonings optional. Things changed fast once we started a family. My husband, Desmond, had some health issues and set a goal to lose weight, and I was pregnant with our second baby. We both needed a reset. Enter: the Mediterranean Diet (or my version of it — Mediterranean-ish).

I followed it mostly for him at first, but it ended up changing everything for us. Two years later, Desmond is down 100 pounds, I actually meal plan and cook, and we’ve built a rhythm that works for real life — toddlers, chaos, and all.

Because healthy eating doesn’t have to mean fancy ingredients, strict rules, or hours in the kitchen.

I keep it simple — recipes that taste good, use ingredients you actually have, and don’t require a culinary degree. The Mediterranean Mom is all about making healthy eating doable for real families, without the pressure to be perfect.
